Add the rice in a large saucepan with a trickle of olive oil, let it brown for about 1 minute over moderate heat. While stirring, pour half glass of water (or white wine) and let it evaporate. Then pour gradually 700ml warm water and let it evaporate completely (15 minutes). Add salt to taste. Add a knob of butter and then mix.
